FruitSource Carrot Muffins (Gluten & Dairy Free!)

These muffins are gluten-free and dairy-free.

1 1/2 cups
blanched almond flour or gluten-free flour
1 1/2 cups
carrots, finely grated
1 cup
pecans, coarsely chopped
1/2 cup
SunRype FruitSource Bars (any flavor, cut into pieces)
Preheat oven to 325°F. Blend first 11 ingredients in a food processor and then fold in pecans and SunRype FruitSource Bar pieces. Divide evenly between 12 cupcake liners. Bake for 20 minutes or until a toothpick comes out dry.
