Oatmeal Shortbread


'Bet you can't eat just one!

Prep Time:  15 minutes

Bake Time:  10-13 minutes

Makes:  3 dozen


1 cup
softened, unsalted butter
1 cup
brown sugar
1 1/2 cups
sifted cake flour
1/2 tsp.
1/2 tsp.
baking soda
2 cups
quick-cooking oats
1/2 cup
SunRype FruitSource Bars (any flavor, cut into pieces)


Preheat oven to 350°F. In a medium sized bowl, mix together butter and brown sugar with a hand mixer. In a separate bowl, whisk together flour, salt and baking soda. Add 1 cup flour mixture to the butter mixture, followed by 1 cup oats. Repeat with remaining flour and oats. Fold in SunRype FruitSource Bar pieces. Drop hard-packed heaping tablespoons of dough onto an ungreased cookie sheet. Gently press each cookie with a lightly floured fork to make 1 1/2" circles. Bake for 10-13 minutes or until pale golden. Cool on rack.
